Its History
The rosé Domaine de l'Olivette draws its complexity from the aromatic subtleties of the Cinsault, the suppleness and structure of the Grenache and the regional variety notes of the Mourvèdre… All the perfumes of the long stone terraces gather together in this wine!
One month before harvest, both the red and wine grapes are subject to the most stringent of quality controls.
After harvesting, the grapes undergo total destemming and "macération pelliculaire" (grape skin maceration) at low temperature depending on the wine varieties in order to optimise the expression of its aromas.
After direct draining and pressing, the grape must is cold clarified before undergoing fermentation for 15 to 20 days.
