Its Style

Its quality balance and complex combination, predominantly Mourvèdre, make this a luxurious and sweet wine complete with the rich aromas of liquorice, ripe fruits and spices.

As a young wine, it is both elegant and strong. As it matures with the years, it acquires a new nobility with a taste that is balanced, round, rich and full, qualities that are particularly evident in our special vintages which age well and live long .

 

  Its History


This wine is the result of the vinification of several wine varieties, namely:

  • The Cinsault for its refined aroma.
  • The Grenache for its ardour, roundness and fruit aromas.
  • The Mourvèdre, a royal BANDOL wine variety whose local microclimate adaptation have provided the regional character of this wine with the perfumes of woods, liquorice, white hide leather, and its structure, with quality tannins and a long and beautiful taste.

While forever ensuring maximum quality, the yield is restricted to 36 hl per hectare and grape picking is done manually at optimum maturity.

The winemaking for the red Domaine de l'Olivette is performed with all the care destined for its nobility. Twelve days of vinification are followed by 15 to 20 days of maceration.

After being kept for 18 to 24 months in oak casks, the wine is aged in bottles for 12 to 48 months.



 

How to make your guests fully appreciate this wine:

Its aromas and complex nature are wholly expressed at 18°. As a young wine, it is "sensational" with grilled meats and strong cheeses. As a more mature wine, it works in sublime harmony with game and meats in sauces.
